Courses for Special Interest

In addition to required program courses many elective courses for special interest are also offered that may be taken to enhance student knowledge in specialized areas of nutrition. A listing of these courses follow:

F&N 26 1 unit - Nutrition for the Active Person 
Assists the athlete and prospective athlete in designing a diet to meet his or her special nutritional needs based upon current research. Areas of emphasis include nutrition need, improving performance through nutrition, evaluating athletic diets, carbohydrate loading, and pre-game meals.

F&N 233 1 unit each
Special Topics - Medical Charting
Nutritional medical charting for dietary professionals in health care facilities. Problem oriented records and S.O.A.P. charting methods are discussed.

Special Topics - Diabetes Mellitus Training
Diabetic Training for health professionals and lay persons. Course covers Diabetic meal planning utilizing exchanges as well as other diet modalities. Current information on medication management and diet, blood glucose monitoring, resource referral and new product information.

Special Topics - Diet Update
Special diet update for health care professionals. Emphasis is on medical nutrition therapy for cardiac, exchange lists for meal planning, herbal therapies and other diet modifications.

F&N 250 2 units - Nutrition for Culinary Arts 
Provides a practical approach to the application of sound nutritional practices in the food service setting. Culinary artist students and professional chefs will be able to incorporate healthful nutritional knowledge in their personal and professional lives. Included are nutrition throughout the lifecycle, menu/recipe design and modification, food product selection, and current trends in consumer preference.

F&N 252AD 1.5 units - Cake Decorating and Sugar Cookery 
Student will learn to create professional quality cake decorations.

F&N 253 1.0 unit - Food Handler Certification
Covers the required standards of sanitation and safety in the handling, preparation and service of food to protect the public's health. Required to meet the California State Health Code.

F&N 255C 1 unit - Nutrition for Adults and Aging 
Nutrition information for seniors. Nutritional needs, special diets, healthcare and menuplanning.

F&N 255D 1 unit - Vegetarian Lifestyle
Learn the healthy way to eat through plant protein combinations.

F&N 256 2 units - Weight Control & Energy Balance 
Techniques of weight control. Emphasis is on assessment of ideal body weight, techniques of diet behavior modification and reasons for emotional eating, principles of energy balance, and long term weight maintenance.

F&N 360AD .5 units- Cultural Foods 
Cooking course focusing on international cuisines.

F&N 361AD .5 units - Modern Meals 
Provides the knowledge and skills required to plan, prepare, and serve nutritious, varied, palatable, attractive meals within the limitations of time, energy, equipment, and budget.

F&N 362AD .5 units - Meal Preparation for Singles 
Meal planning and food selection for the singles. Emphasis is on economy, speed, and attractiveness.
